This Balsamic Vinegar of Modena has been matured in oak, chestnut and juniper barrels creating a unique and rich blend of flavours.

Our 1.34 is 34% thicker than water. Its' rich and unique blend of flavours is created by maturing in oak, chestnut and juniper barrels over an elongated period.
We spent 15 years looking for a Balsamic Vinegar that was good enough to supply to chefs in the world of fine dining. Back in 2005, we found it and collaborated with a small artisanal producer who shares our belief that, when creating the best dish, the ingredient is king.
Following the Consorzio di Modena technique, our Balsamic Vinegar uses handpicked wine quality Lambrusco and Trebbiano grapes. The grapes are crushed and reduced in an open vat, before maturing in oak and chestnut barrels creating a unique and rich blend of flavours. The 1.34 refers to the Balsamic Vinegar being 34% more dense than water. Smooth, rich and viscous, with a pronounced sweet flavour that fades elegantly into a pleasant acidity on the finish - use to finish dishes to dip bread into.
